Funazushi Uoji

Founded in Tenmei 4 (1784), Funazushi Uoji is a longstanding, renowned shop specializing in funazushi.

They use nigorobuna (a type of carp) caught from Lake Biwa, which is then fermented and aged over two winters using traditional methods, ensuring the development of a rich and complex flavor.

The shop’s funazushi was featured in the famous gourmet manga Oishinbo (Volume 5), and since then, it has become a beloved culinary treasure, cherished by many for its authentic taste and deep cultural roots in the region.

One of the best ways to enjoy Shiga Prefecture’s traditional fermented food, Funazushi, at home is through “Funazushi Chazuke”.

This dish allows you to experience the deep, rich flavors of fermented fish, made with Lake Biwa’s bounty, in the comfort of your own home. It’s an ideal souvenir, offering a unique and authentic taste of the region that you can enjoy at your leisure.

The umami and tanginess from the fermentation of funazushi are perfectly balanced. When you pour hot tea or broth over it, the aroma gently rises, making it more appealing and easier to enjoy—even for those who might usually find funazushi challenging to eat.
